Brussel Sprouts

Ingredients:

  • 1.5 lbs brussels sprouts

  • 1/4-1/2 lbs pancetta

  • shaved pecorino or parmesan cheese

  • almonds (whole or sliced)

  • truffle oil

  • salt and peper

  • olive oil

Since I still have two more weeks until I start my internship, I'm filling my time with totally unproductive things like staging this picture. It certainly looks goods, the colors at least, but do you do you want pasta with bananas, lemons, carrots, and pineapple? Sounds like something they'd give you on Chopped. And while I'm doing my best to improve my cooking skills, I don't think I'll be on Chopped anytime soon. In the meantime, I made some pretty good brussels sprouts (find the recipe below). Cheers!

Coconut Milk Popsicles

Take two on homemade popsicles. I'll be honest, the first popsicles were meh. I didn't add sugar in an attempt to make them healthier, so if it's health over taste that you're going for, the first ones are for you. Last night, I decided to try some with sugar. Result? Much better.

Ingredients:

  • strawberries

  • raspberries

  • pineapple

  • coconut milk

  • shaved coconut

  • sugar

(the amount of ingredients depends on how sweet you want your pops and how many you're making. I didn't really measure)

Instructions:

  1. boil a small amount of water in a small sauce pan

  2. wash and cut strawberries, raspberries, pineapple into small pieces

  3. add 1/3 cup sugar to water, bring to boil

  4. add strawberries and raspberries to boiling water, turn to medium simmer

  5. add more sugar as wanted, stir often

  6. lightly grill pineapple in separate pan to bring out natural sweetness

  7. stir shaved coconut into milk in bowl/cup/blender (add ~2 tbsp honey if wanted)

  8. allow fruit to cool (warm is okay, just not hot)

  9. pour fruit into mold

  10. you can freeze the fruit for 1-2 hours if you want neat layers, or put the milk in right away if you want it more like the ones pictured above

  11. add pineapple on top of strawberries and raspberries, stick it to sides of mold for pop of color on teh edges of your popsicles

  12. pour in coconut milk mixture

  13. let freeze ~1 hour

  14. put in sticks

  15. freeze until solid

  16. enjoy!
